Snapper with Roasted Grape Tomatoes, Garlic, and Basil

This is not only a heart healthy dinner, but also one that only takes 30 minutes to prepare and cook.

 

Ingredients:

2 cups grape tomatoes, sliced in half

2 tablespoons extra-virgin olive oil

2 cloves garlic, sliced

1 teaspoon balsamic vinegar

Pinch red pepper flakes

Kosher salt

½ cup fresh Basil leaves, torn

4-6 ounce snapper fillets, with skin

Freshly ground black pepper

 

Directions:

Preheat your oven to 350 degrees F. then toss the tomatoes with the olive oil, garlic, vinegar, pepper flakes, and salt, to taste, in a mixing bowl. Take a baking sheet and spread out the tomatoes and roast until the tomatoes are juicy, around 15 minutes. Once the tomatoes are done roasting, toss them back in the bowl and toss with Basil.

 

Next, you will want to slice a crosscut pattern into the skin of the snapper fillets so that the fish does curl when cooking. Brush the flesh side of the fish with the remaining olive oil and season with salt and pepper, to taste. Next, heat a large non-stick skillet on high heat and place the fish in the skillet, seasoned side down, you will want to cook the fish for about 3 minutes or until the edges or golden in color.

 

Once the fish is done cooking, place on your plate and top it with the tomato and basil mixture, and you are ready to enjoy a heart healthy dinner.

 

 

Whole-Wheat Pasta with Broccoli and Feta

 This is another tasty and quick heart healthy dinner.

 

Ingredients:

1 medium shallot, thinly sliced

1 bunch broccoli (about 10 ounces)

1 medium bunch radishes, trimmed and thinly sliced

12 ounces whole-wheat rigatoni

1 tablespoon sherry wine vinegar

½ teaspoon finely grated orange zest

¾ teaspoon Kosher salt

Freshly ground black pepper

3 tablespoons extra-virgin olive oil

7 ounces feta cheese, crumbled

 

Directions:

Place the shallots in a bowl and cover with cold water, soak for about 10 minutes and then drain. Bring a large pot of water to a boil and salt generously. Fill a medium bowl with ice water and salt as well. Add the broccoli to the boiling water and cook until crisp and tender, about 2 to 3 minutes. Next, stir in the radishes and cook for about another 3o seconds. Take s slotted spoon to remove the vegetables from the boiling water and immediately place in the ice water, after about a minute, drain the vegetables and pat dry.

 

Add the pasta to the same boiling pot of water and cook for about 8 to 9 minutes, once finished, drain and set aside. Start whisking the sherry wine vinegar, salt, and pepper in a large mixing bowl. Slowly start whisking in the olive oil to make the dressing. Once the dressing is finished, place the pasta in a bowl and top it with the broccoli, radishes, shallots, dressing, and the crumbled feta cheese.

 

Escarole with Pancetta

 This is a light heart healthy dinner that can be made quickly if you are in a hurry.

 

Simply cook 3 tablespoons of diced Pancetta in a skillet until crisp and then drain. Add 2 tablespoons olive oil and 4 smashed garlic cloves to the skillet and cook for about a minute. Add 1 head of chopped escarole and cook, tossing until it is wilted, which will take about 5 minutes. Add the Pancetta and season with pepper.
